Ingredients:

  • 1 ½ cups raw almonds (soaked for 4 hours)
  • 1 cup pitted dates
  • 2 cups cashews (soaked for 4 hours)
  • ½ cup coconut oil (melted)
  • ¼ cup maple syrup
  • Juice of 1 lemon
  • 1 tsp vanilla extract
  • Pinch of salt
  • Fresh fruit or berries for topping (optional)

Instructions:

  1. Crust: In a food processor, blend soaked almonds and pitted dates until crumbly and well combined. Press the mixture into the bottom of a springform pan to form the crust.
     
  2. Filling: Drain and rinse soaked cashews. In the same food processor, combine cashews, melted coconut oil, maple syrup, lemon juice, vanilla extract, and salt. Blend until smooth and creamy.
  3. Assemble: Pour the filling over the crust in the springform pan, spreading evenly.
  4. Chill: Refrigerate for at least 4 hours or until firm.
